Today’s recipe is PROTEIN MONSTER BARS!! Delicious!! So, these aren’t completely healthy, but I think it’s a good alternative to a totally non-protein cookie or candy bar! Right? Plus, they are chewy and good. Really good. Really really good! I thought they were going to be gross, but my picky daughter and her very picky family loved them. So did the husband, and I already told you how much he hates healthy food! HA!
Protein Peanut Butter Bars
1/2 cup softened butter
2 c. coconut crystals
1 dropper stevia
3/4 c. warm water
1 1/2 c. peanut butter
4 1/2 c. oats
3/4 tsp baking soda
1 scoop baking protein mix (like the Quest brand I love)
1-2 c. M&M’s
1 c. chocolate chips
Drop 1/2 cup softened butter and 2 c coconut crystals and 3 room temp eggs into high powered blender along with 1 dropper stevia and 3/4 cup warm water.
Pulse till crystals are dissolved and taste to see if need more stevia. Should be very sweet.😬 Now by 1/2 cupfuls blend in 1 1/2 c peanut butter.
In separate bowl mix 4 1/2 c oats and 3/4 tsp soda with 1 scoop baking protein mix, like Quest brand. Stir this dry mix to. Circulate the soda, and then add in the blender mix to bowl. Stir in 1 cup or 2 of m&m’s and 1 cup choc chips. I didn’t have the candies so used differing kinds of chocolate chips. I used a bag of Reese’s baking pieces and a cup of semi choc chips.
Put onto greased cookie sheet. (I definitely would use the full sided ones.) Bake 20-22 minutes at 350 degrees. Warning!! This batter is so stiff I broke my favorite rubber spatula trying to blend it!
Cut into 30 portions.
1-2 bricks Greek cream cheese
Mix it and smear it!
Calories 57 fat is 2.6g carbs 6.2g and protein content of frosting is 2.3g….cut the bars into 48 pcs. Bars calorie is 102 fats 6.8g carbs 7.5g protein 3.2g. If eating frosted each bar is 159 calories 9.4 fat g 13 g carb and 5.5 protein g
